Champagne is rapidly changing and adapting. Much of the region is owned via inheritance and is heavily controlled. With a post-industrial new wave of eating and drinking naturally, the next phase of winegrowers are slowly converting and taking over, convincing more land owners to farm organically, (less than 10% of champagne is organic) and making healthier, low intervention wines. Chavost wines may not be what everyone is used to, and that's a good thing. The wines are pure and transparent and offer a truer-to-life juice.
