The quintessential "unicorn wine"; we're lucky to have it. The wines are complex, long, ethereal. An added attraction is the elegant label, made from cotten, linen, and hemp, handwritten and hand-drawn, into which wildflowers have been pressed.
Made from the few rows of old biodynamically grown Pinot Noir vines among the renowned Chardonnay in the 'Le Charlemagne' climat on the Corton Hill. Has that magic one looks, and sometimes vainly hopes, for in Burgundy PN.
This stunningly beautiful natural Pinot Noir is lovingly crafted by legendary Bourgogne vigneron Pierre Fenals from a minuscule plot of less than 0,5 hectares on rocky white soils with marlstone and sandstone in the parcel of Les Clos Roussots. Grapes are grown biodynamically and worked in the cellar with nothing added or taken away; after an elevage of 18 months in used barrels, the wine is bottled with no fining, filtration or added SO2. Supple, dynamic and focused with dark apple berries, underwood spices, baked plum and fine aromatic herbs.
Named for, and made of fruit from, the smallest village in the Cote de Beaune, after a season that gave the grapes fairly austere growing conditions. Those conditions come through in a crisp, tart fruitiness, with a medium body streamlined by subdued, yet still refreshing acidity. Pair with baked fish or a goat cheese salad.
La Sauvage is a tiny parcel of Chardonnay grapes in Saint-Aubin's La Chatenière 1er Cru vineyard that is right above the winery. This intense Chardonnay with notes of hazelnut, apricot, and brioche, has its acidity softened by a carbonic maceration fermentation.
Shadows is a tiny parcel of Chardonnay grapes in Saint-Aubin's La Combe 1er Cru vineyard that is well shaded by forest. Wild, low-yielding old vines make an intense and rich Chardonnay.
Superposition comes from the Le Trézin parcel of Puligny-Montrachet at the top of the Blagny hill where the altitude keeps the acidity fresh in the wine. A complex Chardonnay with buttery richness and grapefruit aromas that deserves some cellaring.
