High elevation site with soils heavy in clay and light in limestone, from a plot in front of Santenay. Sharp green apple mellowed out with a creamy secondary fermentation.
Chardonnay from the left bank of the Serein river, where the soils are packed full of chalk. Creamy lactic acids are cut through with sharp citrus. Chablis (among many more) wines are named after their home instead of the grape itself; this is because the wine's quality is in its ability to express its terrior. When drinking these wines you aren't just experiencing a great Chardonnay but also the very special spot it comes from.
Hand-harvested organically farmed Jacquere and Altesse grapes from southwest-facing vineyard ‘Les Chateaux’ in Chignin. Old vines (50 years), densely planted on silty limestone soils worked with horse-plow. Carefully sorted whole clusters, delicately pressed and fermented in the tank without additions. Natural malolactic fermentation, 4 months aging in the tank.
Fruit, flowers and aromatic herbs follow one another revealing freshness and flavour on the palate. A Chardonnay that is able to challenge many white Burgundies for its finesse and nobility.
Direct pressing, spontaneous fermentation and ageing in vats for 80% and in wood for the remainder.
Edouard's Chardonnay has rich aromas of hazelnut, pear, and yellow apple with good weight and acidity. A great example of the grape from limestone soils and without new oak flavouring.
A 50/50 blend of Jura's main white grapes, this one is a complex white that hints at the sherry-like flavor Jura's famous vin jaune is known for. Minerality and fruit, with plenty of texture and acidity. Excellent cheese wine.
