Unique Mediterranean-Burgundian winemaking from good pals Paul Perarnau (the farmer) and Willy Roulendes (the vigneron). The grapes are harvested from two certified organic parcels, one situated below the famed Puligny-Montrachet and one in the Southernmost region of Côte de Beaune, Maranges.
High elevation site with soils heavy in clay and light in limestone, from a plot in front of Santenay. Sharp green apple mellowed out with a creamy secondary fermentation.
Fruit, flowers and aromatic herbs follow one another revealing freshness and flavour on the palate. A Chardonnay that is able to challenge many white Burgundies for its finesse and nobility.
Direct pressing, spontaneous fermentation, and ageing in vats for 80% and in wood for the remainder.
The plot is in a site called Dessus Bon Boire, a southern slope facing east, with Jurassic limestone subsoil (Kimmeridgian, Portlandian). The wine is aged for 12 months in 350L barrels, then 6 months blended in vats. A round and delicious wine.
This Chenin from Emeline Calvez has a rich golden colour, light honey and chamomile aromas, with a brilliant acidity. It will reward patient cellaring.
A 50/50 blend of Jura's main white grapes, this one is a complex white that hints at the sherry-like flavor Jura's famous vin jaune is known for. Minerality and fruit, with plenty of texture and acidity. Excellent cheese wine.
