Saint-Romain in Cote de Beaune is the foot of a high cliff with enough elevation to look out over a wide stretch of countryside. Soils are from the earliest epoch of the Jurassic period, consisting of shales and limestones rich in fossils as old as 208 million years. The white wines are pale gold with green tinges. Its nose ranges through lime and white flowers with mineral grace notes. Classic for fish.
