Pinot Noir from vines on Jurassic soil .02 degrees north of the Colline Rouge and with slightly higher elevation. The resulting wine has elegance and bright acidity.
The plot is in a site called Dessus Bon Boire, a southern slope facing east, with Jurassic limestone subsoil (Kimmeridgian, Portlandian). The wine is aged for 12 months in 350L barrels, then 6 months blended in vats. A round and delicious wine.
Edouard Lepesme weaves together the traditions of Burgundy and Champagne with this sparkling wine from Pinot Noir and Chardonnay grapes, made in the Traditional Method.
