Dessus les Vermots refers to 1 of the 29 Lieux-dits of Savigny-lès-Beaune between the Hill of Corton and Beaune. With a demanding production process, care must be taken not to harvest too late, mainting its vital freshness. Too early will result in an unripe, harsh-green tasting wine. It benefits from a meticulous, customized vinification. Roundness, volume, power and balance are all here, and in just the right proportions

Saint-Romain in Cote de Beaune is the foot of a high cliff with enough elevation to look out over a wide stretch of countryside. Soils are from the earliest epoch of the Jurassic period, consisting of shales and limestones rich in fossils as old as 208 million years. The white wines are pale gold with green tinges. Its nose ranges through lime and white flowers with mineral grace notes. Classic for fish but let's be honest, poached eggs are just cooler. Bonus points if you dress your egg up in a tiny tuxedo.

Bourgoin Cognac's most unique XO Cognac gets brought down to 45% alcohol with a blend of fresh and sea waters to replicate the flavour of a Cognac transported by barrels at sea. Pale in colour, but very flavourful with a strong element of salted toffee.
