A barrel-aged sweet wine made using only botrytized chenin blanc grapes. It's been over 20 years since the vintage, giving the wine time to develop intriguing tertiary characteristics.

Hand-harvested organically farmed Jacquere and Altesse grapes from southwest-facing vineyard ‘Les Chateaux’ in Chignin. Old vines (50 years), densely planted on silty limestone soils worked with horse-plow. Carefully sorted whole clusters, delicately pressed and fermented in the tank without additions. Natural malolactic fermentation, 4 months aging in the tank.
Bourgoin's VSOP Cognac gets 5 years in barrel before release and is a great addition to the home bar for cocktails or digestif. Pale in colour with a good concentration of stewed pear aromas and a hint of vanilla.
This XO Cognac from our smallest artisan Cognac producer is distilled with a strong component of lees (yeast) in the base wine that gives a major aromatic shift to the spirit that's honoured by bottling as a single vintage Cognac. Expect fresh fruits and cut hay to jump out of the glass, unlike most XO level spirits.
Bourgoin Cognac's most unique XO Cognac gets brought down to 45% alcohol with a blend of fresh and sea waters to replicate the flavour of a Cognac transported by barrels at sea. Pale in colour, but very flavourful with a strong element of salted toffee.
