A barrel-aged sweet wine made using only botrytized chenin blanc grapes. It's been over 20 years since the vintage, giving the wine time to develop intriguing tertiary characteristics.
Artisanal blend of fine French Brandy & Benedictine with spice aromas of nutmeg, cardamom, and vanilla, rounded out with caramel and citrus notes. On the palate the taste is warm and buttery with butterscotch notes and has a long, smooth cognac finish.
Hand-harvested organically farmed Jacquere and Altesse grapes from southwest-facing vineyard ‘Les Chateaux’ in Chignin. Old vines (50 years), densely planted on silty limestone soils worked with horse-plow. Carefully sorted whole clusters, delicately pressed and fermented in the tank without additions. Natural malolactic fermentation, 4 months aging in the tank.
