This Extra-Brut Champagne comes from young vines of this nearly forgotten grape recently planted in 2014 and 2018. The grapes were picked at full maturity and this multi-vintage bubbly was aged on the lees for 6 months.

High elevation site with soils heavy in clay and light in limestone, from a plot in front of Santenay. Sharp green apple mellowed out with a creamy secondary fermentation.
As the name ("fougue" translates as 'ardor') indicates, this is a wine with impact, with cherry florality on the nose and notes of stonefruit and lemon curd on the palate, and an almond-y finish. Like some passions, this one needs time: open a day in advance for its full expression.
